I'm Chelsea Zhang from Lanzhou, China. I started my business in 2016 to make authentic Lanzhou noodles available in the United States. Lanzhou noodles are essential to me and hold significance for people in Lanzhou. Through this venture, I've learned and grown over the past 7 years. Hearing Chinese people say my noodles remind them of home is the highest compliment and motivates me to continue.
My goal is to introduce more people to Lanzhou noodle culture and the city itself. The name "Hiland Land" is inspired by Lanzhou's topography of mountains and highlands. I dream that one day, my "Highland Noodles" will be loved in every city, just like every place has its "Highland RD."
Chelsea Zhang opens her first restaurant, "鑫源馆," in the United States. As a native of Lanzhou, China, she couldn't find the taste of her hometown in the US, which led to the serendipitous opening of the restaurant. Despite lacking experience in the food industry, she hires chefs and learns the ropes of both the kitchen and front-of-house operations. Customer reviews are mixed, but Chelsea remains determined.
A significant encounter with an elderly customer leaves a deep impression on Chelsea. The customer, who had been away from Lanzhou for a long time, tasted the noodles and felt like he was back home. This experience inspires Chelsea to pursue her goal of creating authentic Lanzhou noodles and promoting Lanzhou's culinary culture.
2016
Chelsea realizes her true passion lies in the restaurant industry, inspired by customer feedback, and finds strength in the positive impact her food has on people's moods. She also recognizes that the Bay Area market is becoming saturated and sees an opportunity in Texas, where there is currently no other Lanzhou noodle shop. This realization leads her to plan expansion to Dallas, Texas, as a way to carry on the culinary tradition and provide comfort through her noodles.
2021
Chelsea embarks on establishing a new restaurant in Dallas while simultaneously expanding her presence in the Bay Area in 2022. The new location in the Bay Area is set in Milpitas, and it carries a fresh name, "Highland Noodle".

Continuing the Journey
The two restaurants in Dallas and Milpitas receive overwhelming praise, boosting Chelsea's motivation. Encouraged by the positive response, her team plans to expand to Austin and Houston, further spreading the love for authentic Lanzhou noodles to more cities.
